Kilchoman has always done things differently. Scotland's most westerly farm distillery, founded on Islay in 2005 by Anthony Wills, has built its reputation on full maturation releases — no shortcuts, no quick finishes, no compromises. The Maury Cask Matured is the latest and most adventurous expression of that philosophy yet.

This is not a finish. The whisky spent its entire maturation in ex-Maury fortified wine casks — 19 casks in total — a production choice so rare it is almost unheard of in Scotch whisky. Maury is a naturally sweet, fortified wine from the Roussillon region of southern France, crafted primarily from Grenache Noir grapes — the same dark, brooding variety behind some of the world's great fortified reds. The casks bring extraordinary depth and an unmistakable crimson hue to the whisky, unlike anything else Islay has produced.

The result is a whisky of stunning contrast and balance. Figs, raisins, dates, and salted caramel on the nose, threaded through with orange peel and Kilchoman's signature soft peat smoke. The palate is rich and layered — pipe smoke and dark chocolate give way to treacle, warming spices, and a dark, wine-soaked sweetness that coats the glass. The finish lingers long and dry with dried fruits, cacao, earthy peat, and a gentle spice that ties it all together beautifully.
